Grilled Pasture-Raised Chicken and Citrus Marinated Kale Salad with Almond Feta

WHOLE30 APPROVED MARINATED KALE SALAD BY MODEL MEALS

Model Meals has added some NEW dishes and this one in particular caught my eye. The Grilled Pasture-Raised Chicken and Citrus Marinated Citrus Kale Salad with Almond Feta combines some great flavors with nutrient dense and gut-healthy foods. Incorporating foods into your daily routine that help to feed the gut microbiome, aka your gut bacteria, is so crucial for vibrant health. Over 90% of the serotonin we produce, our happy hormone, and over two thirds of our immune system is located in our gut. Therefore, if your gut isn’t healthy then you are without a doubt going to feel sick and tired. The kale specifically provides great fiber and roughage for the microbiome to feed on because, as humans, we are unable to fully digest some of the fibrous elements in kale, leaving it to the good bacteria to break it down and feed off of. In addition, the almonds and hemp seeds in the new “feta” crumble provide an excellent source of omega-3 fatty acids that we need for healthy brain function, which is also linked to our gut. Overall, this dish is an excellent choice for anyone trying to get in dense micronutrients to help maintain and restore gut health.

Wild Salmon Niçoise Salad with Red Wine Vinaigrette

I have to say, a good niçoise salad is always my go-to item anytime I eat out at a restaurant because of its whole food ingredients, nutrient density, and mouth watering flavors. The standard niçoise is typically made with seared tuna but this week we added our own Model Meals twist on it by adding wild Alaskan salmon which adds a great boost of nutrients. Salmon is particularly high in astaxanthin which is naturally found in algae. The algae is consumed by the salmon and then passed on to us as a potent antioxidant. Astaxanthin is one of the most potent phytonutrients that we know of right now, and is also what gives salmon its vibrant pinkish red coloring. The variety of vegetables included also add a great layer of fiber into this dish as a whole. Did you know that the majority of Americans get less than half the daily recommended amount of fiber per day? Fiber is what helps to tonify and keep our digestion strong and healthy, while also clearing out any toxins or waste. Plus, these vegetable varieties also add in flavonols and phytonutrients that actually turn food into potent medicine. These flavonols and phytonutrients are the potent chemical compounds that can help to strengthen, restore, and revitalize damaged cells.  So, now I hope you can see why this salad is such an easy choice. While today’s breakdown may have been a bit more scientific than normal, the key takeaways are to get in a variety of fruits and vegetables in your diet throughout your meals and also remember that micronutrients are just as important as macronutrients.

Both of these dishes provide dense micronutrients that will help to feed your cells and provide you with sustainable energy and vibrant health.
