When you think of tuna salad, your mind probably goes straight to a sandwich. But you don't need two pieces of bread to enjoy such a classic treat. Araceli earned the nick-name AriCELERY this week while chopping up all of our fresh market vegetables that we like to serve as dippers. Tuna salad is by far one of our most popular snacks at Model Meals. Spring Greens Frittata with Spaghetti Squash Crust

Spring is almost here in Southern California! Or maybe it's the 90 degree weather that just makes us feel like winter is long gone. Since we only serve seasonal ingredients here at Model Meals, we get really excited when the weather shifts and new produce arrives. To celebrate, we decided to throw as much as we possibly could into this week's frittata.

"Falafel" was something I hadn't had in years since I adopted a fairly regular Whole30 lifestyle so when Chef Lauren suggested we make our own with cauliflower, we were skeptical but intrigued. It turned out to be an absolute favorite and we'll surely be repeating it! It's a great option for vegetarians or #meatlessmonday

I'm not entirely sure where the word "fritter" came from but it sounds cute as hell so don't be surprised if you see "fritters" creeping up all over our future menus. Fritters creeping. Now THAT is something I can get down with. Here's a rap...
I'm up all night, can't get no rest no
I'm having mean green dreams of tarragon pesto
Don't know what to pair it with, feeling oh so bitter
Oh that's right, got me a Carrot Zucchini Fritter
Ok great.
