1 lb green beans, trimmed
2 tbsp balsamic vinegar
1/2 lb bacon (be sure there is no sugar added and use hormone/nitrate-free when possible)
1 small red onion, diced
1 cup grape tomatoes, halved
Salt and Pepper
In a skillet on medium-high heat, cook bacon to desired crispiness. Leave a couple teaspoons worth of drippings in pan and add green beans, onion, salt and pepper. Cook until green beans are no longer hard, but not soft or mushy. Chop bacon into pieces and add to skillet. Cook for 1 minute and then transfer bacon and vegetable mixture to a bowl. Add tomatoes, balsamic vinegar, and additional spices to taste. I like a little garlic powder and red chili flakes. Mix well. I prefer to serve this cooled but it is good warm too!
