1 bag (12oz) organic broccoli
1 bag (6oz) organic spinach
1 can unsweetened, full-fat coconut milk
1 Tbsp ghee
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
In a food processor, pulse raw broccoli until it is in tiny pieces but not totally “rice”.
In a large saucepan on low heat, melt ghee. Add spinach and processed broccoli. Add coconut milk. Add spices. Mix all ingredients well. cook on low heat for 20-30 minutes, or until the majority of the coconut milk has evaporated. Is that the right word? I have no idea. I’m just faking this whole chef thing. You should see how many times these adventures DON’T work out. Whatever. Just simmer until desired consistency. Remove and serve.
I definitely don’t recommend eating this if you have plans later. It’s more of an “I’m staying in making vision boards and stalking instagram hoping I don’t accidentally hit like from 76 weeks ago” sort of side dish.
