Our Asian Beef and Pork Meatballs were a total hit with our meal delivery clients the past two weeks. When we asked what recipes you were dying for, we knew you had great taste when you asked for these. Our goal at Model Meals is to help people eat cleaner whether they’re buying our meals or they’re cooking them for themselves. We want Model Meals to be accessible no matter who you are or where you live! Use organic and local ingredients whenever possible
1/2lb organic/pastured ground pork
1/2 lb grass-fed/pastured ground beef
1/2 white onion, finally chopped
2 scallions, finely chopped
1/4 cup fermented chili sauce (recipe below)
1/4 cup sesame oil
course ground salt
course ground pepper
toasted sesame seeds (for garnish)
FERMENTED CHILI SAUCE:
2 onions, peeled and quartered
6 large tomatoes, quartered
2 red jalapeños, whole
2 cloves garlic, peeled and whole
1 tsp Red Boat fish sauce
First, we’ll make the chili sauce: Preheat oven to 375. On a baking sheet add onion, tomato, jalapeño and garlic. Drizzle with sesame oil, salt, and pepper, and roast until blistered about 15-20 minutes [Model Meals TIP: Blistered means blackened- skins charred] Once blistered, add all contents of the baking sheet into a food processor fitted with an S blade. A blender will work if you don’t have that. Process until very smooth. Push sauce through a strainer into a bowl to remove seeds and stems from sauce. Add 1 tsp red boat fish sauce (read your labels as most have sugar. Red Boat is a great option). Stir and adjust seasonings to taste.
Now, here come the meatballs: Reduce oven to 325. Bring beef and pork to room temperature [Model Meals TIP: It’s too hard to mix the two meats when very cold] Add chopped onion, chopped scallion, and sesame oil to the meat mixture. Work LIGHTLY through the ground meat. [Model Meals TIP: overworking the meat can make it tough as it breaks down the fibers in the meat] Pour 1/4 of the chili sauce over meat mixture. Mix lightly into meat. Form meatballs into 1.5 to 2oz meatballs. A 2oz ice cream scoop works very well for this to keep balls consistent. Woah.
Place meatballs on a parchment-lined cookie sheet 1/2 an inch apart. Bake for 18 minutes. Remove from oven, reserving pan drippings. Serve meatballs with remaining chili sauce and pan drippings. Garnish with scallions and sesame seeds.
