Grass-fed Bison is a leaner and more protein-packed alternative to ground beef. It has lower fat and calories and as many Omega-3s per serving as Salmon. Like Woah. Our bison burgers were a big hit with our Model Meals clients the past few weeks and so we wanted to share the recipe so you could create it for yourself at home!
Serves 2: Use local and organic ingredients whenever possible
1 lb organic, grass-fed bison
4 scallions, chopped
6 strips of bacon, chopped (be sure your bacon is sugar-free, and look for hormone/nitrate-free as well- The Pederson brand has a “Paleo” version at Whole Foods)
Rendered bacon fat (from above bacon)
2 tsp salt
1/2 tsp pepper
Preheat oven to 350 degrees to prepare to par cook the bacon. Lay bacon flat on parchment paper on a cookie sheet. Or a baking sheet. We’re not really cookie people here. Bake 10 minutes. Remove from sheet and let cool for 5 minutes, saving bacon fat to be used in burgers.
Adjust oven to 400 degrees. In a bowl, add bison, scallions, salt and pepper. Coarsely chop the bacon and add it to the ground bison mix along with the rendered bacon fat. Gently mix together with hands. Form into 8oz Bison burgers. Using a cast iron skillet, sear both sides, 4 minutes per side. Finish cooking burgers in the oven for 8-10 minutes until desired temperature. Chef Cathy suggests rare. Be cautious with cook times as bison is easily overcooked. Slather with homemade mayonnaise like a savage.
