Tomato Basil Salad with Pine Nuts

Simple, fresh, flawless. With the right ingredients, clean eating can be so easy, and this salad can be pieced together in minutes. 

Serves 2: Use local and organic ingredients whenever possible

4 large tomatoes (we used heirloom) 

1/2 cup high quality olive oil

1/2 cup basil, chiffonade cut (MM Tip: This essentially means "in ribbons”- roll leaves and cut lengthwise into long thin ribbons)

2 tbsp high quality vinegar (we use Banyuls)

2 tbsp pine nuts

2 tsp course sea salt

1 tsp course black pepper

Start with the freshest farmers market tomatoes you can find, any kind, we used a variety of heirloom. Cut into bite sized pieces. Toss with olive oil first to coat tomatoes, then add basil, salt, pepper, and then vinegar, and pine nuts last for garnish. Simple, fresh, delicious.
