Makes an incredibly delicious, nutritious and somewhat addictive sweet potato. [This is actually an item that would be easy to meal prep with- make a bunch and eat them throughout the week for breakfast, lunch, dinner, a pre-workout snack, a post-workout snack, snack in the car, movie snack...you get it.]
Makes one potato:
1 Medium sized sweet potato
1/2 bunch of chives, minced (aka cut into small pieces)
Preheat over to 350^
Save a little time and nutritional content by NOT peeling but still washing and scrubbing a medium sized sweet potato. Dry it off so it's not too slippery! Put it on your favorite cutting board and using a sharp knife (the sharper the better) make evenly spaced 1/4“ cuts down the length of the potato.
IMPORTANT NOTE: DO NOT CUT ALL OF THE WAY THRU THE POTATO. LEAVE ABOUT 1/4 INCH BETWEEN THE POTATO AND YOUR CUTTING BOARD. We wouldn’t be mad, just disappointed. (Why? This creates a place for the spices and avocado oil to collect and mingle and make your sweet potato super delicious.)
Pour a drizzle of avocado oil over the potato and sprinkle with salt, pepper and smoked paprika. 'How much?', you ask- well it depends on how salty and peppery you like things to be- feel free to follow your own preference! You do you.
Place your sweet potato on a baking sheet or on some sturdy tin foil and carefully place in your preheated oven.
Cook for 35 minutes then check to see how tender it is. If it's gone to mush- it's gone too far, if it's rock hard you haven't gone far enough. Ideally it will be easy to insert a fork but not falling apart.
Pull it out of the oven and drizzle ghee on top, then sprinkle the minced chives on top.
Put it back in the oven and bake for 5 more minutes.
Carefully take out of the oven and let cool. This is going to be hard because it will smell and look delicious but your tongue will really appreciate you waiting.
