Bacon, Lettuce, Tomato, and Avocado Sweet Potato Toast with Primal Kitchen Foods

Since establishing National Avocado Day in 2017, we've been sharing the Avo-love ever since and this year is no exception. We've joined forces with our avocado-loving, Whole30 Approved friends from Primal Kitchen to craft a recipe that not only features buttery ripe avocados but bacon, tomato, and the best avocado oil-based products made by Primal Kitchen. These open-faced beauties are the perfect, flavor-packed breakfast or snack. We recommend adding a fried egg and EXTRA avocado for good measure. ENJOY!

Ingredients | Sweet Potato Toast with Nut Butter and Homemade Jam

Serves 2

    Details | Sweet Potato Toast with Nut Butter and Homemade Jam

    The perfect cooking spray

    Step 1. Bake your sweet potato toast.

    Preheat oven to 400 degrees and spray a baking sheet with Primal Kitchen Avocado Oil.

    Slice sweet potato lengthwise and place on baking sheet. Spray tops with avocado oil. Bake for 30-40 minutes or until flesh is tender. Remove from oven.

    Step 2. Cook your bacon.

    Place pan on medium heat stove top and spray with a little bit of avocado oil. Chop bacon into bits and cook in pan until cooked through. Drain on paper towel.

    Step 3. Slice your veggies: slice avocado, dice red onion, slice tomato.

    Step 5. ASSEMBLE

    Place sweet potato on plate and spread with Primal Kitchen Avocado Oil Mayo. Layer lettuce or arugula on top, followed by tomato and avocado. Sprinkle with red onion, bacon bits, and finish with Everything But The Bagel Seasoning.
