Cauliflower "Oats" with Super Seed Crunch

*Note: Though the ingredients in this recipe fall into the Whole30 program outlines, it is a dish that is technically considered "SWYPO" (sex with your pants on) and would be best enjoyed after your Whole30 challenge as it is technically replicating something that could encourage old less healthy habits
Never before has a dish caused such a ruckus in the Model Meals kitchen. Crowds flocked from all around. And by crowds I mean our Model Meals team members but crowds nonetheless. Everyone wanted to snap a photo of this beautiful new breakfast.
Whether you're new to clean eating or you've been doing it for years, there's a slight chance that you are kinda, somewhat, mildly over the idea of eating another egg for breakfast. Or at least every day of the week. In can be Egghausting.  And with that being said, let me formally introduce you to the Cauliflower "Oat". Yep, this new take on oatmeal is completely grain free and low carb too!
Cauliflower? As a sweet porridge? Are they serious? We are more than serious. And after one bite, you will be a super fan just like we are. You are going to want this over and over again, so get creative. Try different flavors, toppings, spices, and let us know what you come up with.
    
So whether you're doing a Whole30, avoiding the often inflammatory effects of modern grains, or just looking for a lower carb snack option, look no further. We topped ours with our very own Super Seed Crunch but you can throw in fresh fruit, nuts, or anything your heart and stomach desires. 
Serves 2
*use organic ingredients whenever possible*
Cauliflower "Oats"
1 head cauliflower 
2 cups full fat coconut milk 
2 finely chopped dates
1 tsp cinnamon 
1/2 vanilla bean, split 
orange zest from one orange
Super Seed Crunch
(feel free to use any sort of toppings you like)
1 tsp chia seeds 
1 tsp flax seeds
1 tsp hemp seeds
1 TBSP chopped almonds
1 TBSP pistachios
1 TBSP dried cranberries 
1 TBSP raisins
Wash and dry your head of cauliflower and chop it into florets. Place the florets into a food processor and finely rice or chop until you have large granules.
 Put a medium pot on your stove over low heat and add the riced cauliflower, chopped dates, cinnamon, vanilla bean and stir. 
Slowly add the full fat coconut milk to the pot. Stir the mixture quit frequently for approximately 10 minutes, until cauliflower is tender. Remove from heat and stir in the orange zest.
Divide your "oats" into 2 bowls and top with our delicious super seed crunch, or your own healthy toppings. Please let us know what you come up with in the comments below. We would also love to see a picture of your home version on instagram. Be sure to tag us @modelmealskitchen !

  • Thanks for the recipe! I loved this so much I made it at home earlier this week…. soooo good! I added diced apple and unsweetened shredded coconut. I made a big batch and eat it every morning with scrambled eggs. Thanks again!
