Cauliflower Tabbouleh

Tabbouleh -- whatta word! I dare you to say that 10 times fast. I decided to research this dish since before today I thought it was the name of a hip new board game. Turns out traditional tabbouleh is made with bulghur wheat instead of the riced cauliflower in our version.
 
Well, my mother taught me to keep my mouth and my diet clean, so I have to give a giant 🙅🏻🙅🏼🙅🏽🙅🏾🙅🏿 to anything that rhymes with "vulgar" and is also a grain. Gotta keep my house Whole30 friendly!
 
This dish should definitely be flagged as a favorite on your Whole30 vegetable recipes Pinterest board, as it's refreshing, has a unique taste, and it pairs nicely as a side dish with a hearty meat entrée as well! We like to serve it alongside our lettuce-wrapped lamb burger.

Serves 4
*use organic ingredients whenever possible*
1 small head of cauliflower
1/4 cup lemon juice
1 teaspoon finely grated lemon zest
1 cup (packed) parsley
1 teaspoon salt
1 tablespoon mint
3 tablespoons EVOO (divided)
1/2 cup cherry tomatoes, quartered
Use a handheld box grater to grate the cauliflower, or a food processor with a few quick pulses until the cauliflower is roughly the size of a grain of rice.
Use 1.5 tablespoons of the olive oil to pour onto a skillet or large pan and put over medium-low heat. Saut é the riced cauliflower for about 2 minutes, until tender. Remove from heat, and pour cauliflower into a large mixing bowl.
Add lemon juice, lemon zest, parsley, salt, mint, 1.5 tablespoons of EVOO to food processor, and pulse until evenly chopped to a similar size as the cauliflower. 
Pour food processor mixing into the bowl with the cauliflower. Add the cherry tomatoes, stir. Enjoy chilled!
