Cinnamon Applesauce with Roasted Spiced Apples

Do you know how easy it is to make your own applesauce? Much easier than you might think and the taste is far better than what you will get from a store-bought jar.
Our amazing saucier, Chef Paul Barbosa, got these apples bubbling with the perfect blend of spices. The smell in the kitchen while this was being served up was out of this world. We just can't get enough.
If you have kids in the house, they will love this homemade treat. But you don't have to be young to appreciate something as simple as baked apples. This snack can satisfy a craving for sweet or spicy without breaking any rules. If you are adhering to a Whole30 plan, that has to be tantalizing to your tastebuds. AmIRight?!
Serves 6
*use organic ingredients whenever possible*
5 lbs apples
1 cup apple cider
spices (we use cinnamon and cardamom)
 
Peel, core and chop your apples. Reserve 2 cups for the roasted spiced apples. Place the rest into a tall pot and cover with apple cider. Add spices to your liking and cook over medium heat until apples are soft. Remove from heat and blend with an emulsion blender or high speed blender. Place applesauce back on the stove over medium heat until reduced by 1/4.

Preheat oven to 350 degrees. Take your reserved cut apples and coat with spices. Place them onto a parchment lined baking sheet and bake for 8 minutes. Allow your applesauce to cool. Top with roasted apples and serve.
