Masala Mashed Potatoes

I can't think of too many things that are more enjoyable than a bowl of mashed potatoes. It is truly a comfort food for humans of all ages. But sometimes the hidden ingredients can be, well, not so comforting. Behold, our clean and ethnic twist on a classic comfort food.
If you are new to cooking with Indian spices, this recipe might just get you hooked. Garam Masala is a wonderful introduction to the flavors of India. The traditional masala recipe includes black and white peppercorns, cloves, cinnamon or cassia bark, mace (nutmeg), black and green cardamom pods, bay leaf, cumin.

The rich and robust spices are perfect for warming you up on a cold night. Here in southern California, we don't get many of those, but when we do...we are so unprepared, we think we are "freezing".
    
So grab the very few ingredients it takes to make this easy recipe and give yourself, your family, or anyone you care about some comfort with this delicious and out-of-the-ordinary dish.
Serves 4
*use organic ingredients whenever possible*
 
2.5 lbs organic potatoes (we recommend yukon gold or butterball)
1-2 TBSP garam masala
1/2 cup ghee
1 TBSP salt
1/4 cup cilantro leaves

Wash your potatoes and leave the skins on. Spread potatoes onto a baking sheet and roast in a 350 degree oven for 30 to 40 minutes, until fork tender. Remove potatoes from oven and quickly place into a bowl. Cover the bowl with plastic wrap and allow the potatoes to steam while you prepare the other ingredients.

Place the ghee in a large pot over a  low flame on your stove. Allow the ghee to melt completely. Turn off the heat and add spice to the melted ghee. Allow this to perfume for about 30 seconds.

Add the cooked potatoes to the pot and smash to desired consistency. This can be done with a hand mixer or a masher. Stir in your desired amount of salt. Garnish this side dish with cilantro.
