Monkey Bites

Ahhhhh, the famous Model Meals Monkey Bites. The highly sought after Whole30 treat that our customers go crazy for. I owe my title as "Official Model Meals Dessert Master" to these beautiful little balls.
If you have a sweet tooth like me, you can't let a day go by without a little treat to satisfy those tastebuds. If you are following a Whole30 meal plan, those sort of cravings can be your worst enemy. Thanks to my own wellness journey and passion for raw desserts, I felt confident that I could create a healthy, Whole30 sweat treat that everyone would love.
Getting to make these treats for our wonderful Model Meals customers is a treat in itself. You will normally find me behind the scenes running the logistics side of things, so when I get to hang out in the kitchen and get creative with some of my favorite ingredients, its always a good time. And having my mom there to help me isn't bad either.
So do yourself a favor. Next time you crave something sweet, don't let yourself cheat! Get in your kitchen and have some fun! This recipe is so quick and easy. You can substitute ingredients for different flavors too. We would love to see what you come up with.
 
Makes 10 - 16 bites
*use organic ingredients whenever possible*
2 cups cashews
1/2 cup cacao nibs
4 cups pitted dates
2 bananas
3 TBSP cacao powder
shredded coconut for garnish
Combine bananas and cocoa powder in a high speed blender until smooth. Place cashews, cacao nibs, and dates into food processor and pulse until sticky and broken down to rice size. Empty contents into a large bowl. Add banana mixture to bowl and fold in. Batter should be sticky but not wet.
Using a tablespoon or melon baller, scoop small rounded balls onto a parchment lined plate. Garnish with shredded coconut. Place monkey bites into refrigerator and allow to chill for 30 minutes to an hour before serving. Keep refrigerated in an airtight container.
