Nut Butter

I need you to brace yourselves. This is the greatest nut butter in the world*.
*A strong statement with no factual evidence except for the fact that every Model Meals employee loves this stuff as much as I do.
With no added sugar, you can drizzle this stuff on a slice of sweet potato "toast", over a thai-inspired salad as a dressing, or simply as a dipping sauce for your apple slices.
The worst part about this nut butter? It forces you to practice mindful eating and not consume it all at once, because it is that finger-lickin' good.
Makes ~2 Cups (1 Jar)
*use organic ingredients whenever possible*
2 tablespoons of olive oil
1/3 cup almonds
1/3 cup walnuts
1/3 cup cashews
1/3 cup sunflowers
1/3 cup pistachios
1/4 cup dried cranberries
1/4 teaspoon extra fine sea salt
Spread out all nuts in a single layer on a baking sheet and roast in the oven at 350* for 10-20 minutes until evenly browned. Allow to cool completely.
Pour nuts into a food processor, and grind into a fine powder (2-3 minutes). Add the olive oil. Continue processing for about 10 minutes. During this time, the nuts oils should be releasing, but if you feel it needs more oil, it's ok to add more. After 10 minutes, add the cranberries and process again for about 5-10 minutes until it is the creamy consistency you're happy with. Store in a refrigerator. Enjoy!
