I remember the first time I learned what exactly was Whole30 compliant, I kissed my menus from my favorite local takeout spots goodbye. After a ceremonious tossing of the menus, I then recited affirmations to myself over and over: "I will not miss take out. I will not miss take out."
Guess what? I missed my take out.
Thank goodness for the wizards in the Model Meals kitchen, who have managed to not only create one of my favorite dishes on the menu, but this orange chicken bowl tastes better than that mystery additives take out by a long shot!
And in case you're wondering, I have since changed my daily affirmations to something other than my past fixation on Chinese take out.
Now go dig up your chopsticks - it's time to start cookin'!
*use organic ingredients whenever possible*
1 cup orange juice (no sugar added, get the fresh squeezed!)
1 teaspoon minced garlic
1 teaspoon ground ginger
1 teaspoon rice vinegar
1 teaspoon coconut aminos
1/4 cup onion powder
optional: 2 tablespoons arrow root powder (to act as thickening agent)
For Chicken Bowl:
1 lb chicken breasts
1 cup broccoli florets, chopped
1 cup bok choy, chopped
1 cup bell pepper, chopped
1/4 cup pineapple chunks
1 tablespoon green onion, diced
1 teaspoon sesame seeds, for garnish
4 tablespoons sesame oil
Chop chicken into 1 inch chunks. Set aside.
Combine all sauce ingredients into a pot on medium heat. Let sauce simmer and stir frequently to avoid burning. Allow sauce to thicken then remove from heat.
Add 2 tablespoons of sesame oil to a large saute pan over medium heat and cook chicken for about 5-7 minutes, stirring occasionally. Once chicken is cooked through, pour half of orange sauce over chicken, and stir to evenly coat it all.
At the same time in another saute pan, add the remaining 2 tablespoons of sesame oil over medium heat and add the broccoli, bok choy, bell pepper, and pineapple chunks. Stir occasionally until veggies are soft, about 5 minutes. If you'd like, pour remaining sauce on veggies.
Scoop veggies into bowl, top with orange chicken. Garnish with green onions and sesame seeds. Enjoy!
