WHOLE30 APPROVED MODEL MEALS COLESLAW RECIPE

I recently had a potluck BBQ to attend and needed a dish that I could easily prep the night before and this Whole30/Paleo coleslaw recipe was the perfect addition. I had so many guests asking for my recipe at the end of the evening and most of them were amazed that this side was completely refined/added sugar free and Whole30 Approved. I prepped and mixed the veggies first, then stored in an airtight container. I prepped the dressing second and saved it in a separate container. Just before serving, I mixed the dressing with the slaw and finished with salt and pepper. It was so simple, easy and big on flavor. I hope you decide to bring this to your next get together and don't forget: the Primal Kitchen Avocado Oil Mayo is definitely one of the stars of this coleslaw!

WHOLE30 APPROVED MODEL MEALS COLESLAW

Ingredients | Avocado Hummus

Serves 4-6

*use organic ingredients whenever possible*

For the Slaw

  • 4 Cups Shredded Green Cabbage
  • 2 Carrots, Peeled & Shredded
  • 1/2 Red Onion, Sliced Thin
  • 1/4 Cup Sunflower Seeds

For the Dressing

  • 1 Cup Primal Kitchen Mayo
  • 1-2 Tbsps Primal Kitchen Ketchup
  • 2 Tbsps Apple Cider Vinegar
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Salt and Pepper to Taste

      Details | Avocado Hummus

      Directions for the Slaw

      1. Hand chop or use a spiralizer to shred/chop cabbage
      2. Wash carrots, peel, and shred with a grater or peeler
      3. Thinly slice onions
      4. Mix veggies together and toss in sunflower seeds

      Directions for the Dressing

      1. Add all dressing ingredients in a bowl or mixer and combine until creamy
      2. Drizzle on veggies mixed with sunflower seeds and add salt and pepper to taste

      Combine slaw and dressing immediately before serving.

      This recipe is easily made to feed a large group for your next block party or BBQ- just double the recipe!
