It's that wonderful time of year when we get out our shorts and tanks and hit the trails again! Ok, let's be honest. Here in Southern California it's pretty much that time year round but we still like to make special seasonal "occasions". Spring break is often an active time and we're seeing everyone out and about with their dogs and kids. Hiking, biking, camping, road trippin'. And gosh darn it, you must be STARVING! Well fear not!
Enter: Model Meals' Tropical Trail Mix
When you're busy and on the go, it can be easy to settle for a midday snack you'll regret later. If you are in the midst of a Whole30, you might just skip a meal if you don't have time to find something compliant, and that is no good! Now is the time to make sure your pantry (and purse) is stocked with healthy snacks.
Nuts, seeds and fruit are the easiest "to-go" "go-to" when you are gluten-free, dairy-free, grain-free, soy-free and sugar-free. But you don't have to eat them all plain and alone. If you have yet to make your own trail mix, try it now and you will be hooked on creating different flavor combinations. The possibilities are endless.
We were feeling all sunny and tropical in the kitchen this week, so we got sweet on some pineapple, dates and coconut. This combo was a winner. We can't wait to see what you come up with!
*use organic ingredients whenever possible*
1 cup cashews
3/4 cup hazelnuts
3/4 cup almonds
3/4 cup sunflower seeds
1/3 cup shredded coconut
1/4 cup chopped dates
1/4 cup raisins
1/4 cup chopped dehydrated pineapple
1/4 cup chopped dehydrated apple
Start by roasting your nuts. Preheat oven to 400 degrees. Spread your cashews, hazelnuts and almonds onto a parchment lined baking sheet. Place in the oven for 5 to 7 minutes. Nuts should be golden brown.
While your nuts are cooling, chop up your dates, dried pineapple, and dried apple into small pieces.
Place all ingredients into a large bowl and toss with hands. Return trail mix to your parchment lined baking sheet and place in oven for an additional 10 minutes. Once cooled, enjoy!
