With September Whole30 officially upon us, we know you’re busy searching for Whole30 compliant recipes that pack a ton of flavor and this recipe sets the bar high. Our “popcorn” chicken is so versatile and can be personalized to please any palate. While we give you the basic iteration of this Whole30 chicken recipe, you can easily make this a buffalo chicken, BBQ chicken, or whatever flavor variation your heart desires! Simply add a generous dollop of the sauce of your choosing into the frying pan during the last minute or so of cooking your chicken and transformed this dish with endless options of flavor. The sky is truly the limit with this recipe and that’s great news when it comes to fighting food boredom during Whole30. Plus, we’re giving you a super easy recipe for some delicious root vegetable fries that you won’t be able to get enough of! This recipe serves six, so it’s perfect for that backyard potluck, a work party, or your weekly meal prep. Half the recipe if you’ve got less hungry mouths to feed, but we know anyone who tries it is going to want seconds.

Whole30 Recipes to the Rescue

Serves 6

*use organic and pasture-raised ingredients whenever possible*

For the Chicken

  • 2 Pounds Chicken Breast, Cut into One Inch Pieces 
  • 2 Eggs, Lightly Whisked
  • ¼ Cup Coconut Cream
  • 2 ½ tsp Salt
  • 2 Cups Arrowroot Powder 
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ Cup Extra Virgin Olive Oil

For the Fries

  • 2 Pounds Root Vegetables of Choice (e.g., Carrots, Beets, Parsnips, Sweet Potatoes, etc.)
  • 2 Tbsp Extra Virgin Olive Oil or Cooking Fat of Choice
  • Salt and Pepper to Taste

Directions for the Chicken

  1. Sprinkle 1 ½ teaspoons of salt onto chicken pieces
  2. Combine remaining salt, arrowroot, garlic, and onion powder into a large bowl
  3. Combine eggs and coconut cream in a shallow bowl
  4. First, dredge the chicken pieces through the egg mixture, then transfer to the arrowroot powder mixture bowl, being sure to coat on all sides 
  5. Heat olive oil or cooking fat of choice in a large, non-stick skillet over medium heat and working in batches, brown the chicken pieces until they are cooked through and have a nice crispy crust- about 5 minutes each
  6. Once cooked, set aside on paper towel-lined plate and sprinkle with additional salt to taste
  7. Optional- Add sauce of choice (BBQ, Buffalo, etc.) to pan in the last few minutes of cooking and toss to coat chicken

Directions for the Fries

  1. Preheat oven to 425°
  2. Wash and peel your root vegetables of choice
  3. Cut into equal size pieces, about a ¼ inch thickness
  4. Coat evenly in extra virgin olive oil 
  5. Spread cut veggies evenly in a single layer onto a large baking sheet, using two sheets if needed
  6. Roast in oven for 15-20 minutes, then using a spatula, flip all fries, return to oven, and roast for an additional 15-20 minutes or until desired crispiness is achieved
  7. Once done, salt and pepper to taste
